     Banana Gingerbread

2 C whole wheat flour
1/4 C toasted wheat germ
1 tsp. baking powder
1 tsp. baking soda
1-1/2 tsp. ground ginger
1 tsp. ground cinnamon
1-1/2 C mashed ripe banana
1/4 C molasses

Combine flour, wheat germ, baking powder, baking soda and spices and stir to mix well. Add the remaining ingredients and stir just until dry ingredients are moistened. Coat an 8x4 loaf pan with non-stick spray. Spread mixture evenly in pan and bake at 325 degrees for 40-45 minutes or until toothpick comes out clean. Remove bread from oven and let sit for 10 minutes. Invert load on to a wire rack, turn right side up and cool before serving.
