     Kentucky Derby - Buffalo Bourbon Wings

Ingredients
10 full chicken wings
2 Tbs. coarse salt
2 Tbs. smoked paprika
1 Tbs. cayenne pepper
2 Tbs. garlic powder
2 Tbs. onion powder
1 Tbs. freshly ground pepper
6 Tbs. butter, melted and divided
1 cup Franks hot pepper sauce, divided
 
2 Tbs. bourbon, divided
1 tsp cayenne pepper, divided
1 Tbs. coarse salt, divided
1 Tbs. freshly ground pepper, divided
carrots, celery and ranch for dipping

Instructions
Carrie’s version of wings at the Kentucky Derby party! Special Notes- 1) Cut back on Cayenne unless you want them really spicy. 2) Cut wings and drummies apart. 3)I did not add the other half of the sauce mix before serving. In a mixing bowl, combine the first 6 ingredients (through the pepper) and toss to mix. Rinse the wings and pat them dry. Liberally rub with the dry spices and refrigerate at least 6 hours and up to overnight. Preheat oven to 400. In a bowl, combine half of the buffalo marinade (butter, hot sauce, bourbon, cayenne, salt and pepper) and whisk until combined. Toss the chicken with the marinade and arrange on a rimmed baking sheet. Bake for 60 minutes, checking at the 50-minute mark. Have the other half of the marinade/sauce in a separate bowl and brush wings once more before serving. Serve wings with celery, carrots, ranch and bleu cheese dressing. NOTE- Frying the wings will yield crispier skin,but baking them is a little healthier.
