     Corn Souffle

Ingredients
2 eggs beaten
1 c sour cream
1 stick melted butter (1/2 cup)
1 8oz can cream style corn
1 8oz can kernel corn drained
1 small box Jiffy corn muffin mix
 

Instructions
Oven 350.
Melt butter in a souffle casserole dish. Add 2 eggs and beat. Add remaining ingredients and mix well.
Bake uncovered for 40 minutes or until it is firm when shaking the casserole. (sister needs 60 minutes baking time.)
MAKE AHEAD - bake one or two days ahead. Cool and tightly cover with plastic wrap. Reheat in 300 degree oven 15-20 minutes until warmed through.
