     Vegetarian Lasagna

Ingredients
Super Primavera Ragu spaghetti sauce
Italian Recipe stewed tomatoes
8 oz. low fat cottage cheese
2 - c. Mozzarella cheese
¼ c. Parmesan cheese
1 zucchini
1 carrot
About 5 mushrooms
Lasagna noodles, cooked
 

Instructions
Combine all cheeses and set aside. Slice and sauté in oil or water, carrots, zucchini, and mushrooms in a frying pan (add a dash of dried onion and garlic if desired). Add tomatoes (with juice) and Ragu sauce. In 9 x 13 inch casserole dish, layer ingredients in the following order- Spaghetti sauce, noodles, cheese, noodles, spaghetti sauce, cheese, noodles, spaghetti sauce. Make sure all noodles are covered with sauce. Sprinkle mozzarella or Parmesan if desired. Cover with aluminum foil and bake at 350 degrees for 45 minutes.
