Chop the vegetables into good-sized chunks - not
too fine. Slice the onions into thin half rings.

Combine the vegetables and the arugula. Toss with
a generous portion of extra-virgin olive oil and a
few splashes of balsamic vinegar.

Combine the herbs, in descending quantities,
beginning with oregano, and using less of each
one. Play with the proportions until you have
something you like. Add salt and fresh ground
black pepper to taste. Combine well.

Add the herb mixture and toss well. Add the feta,
which you can either cut into chunks or crumble,
and toss well. Top with the olives. Let sit for a
bit to allow the oil/vinegar to extract flavor
from the herbs.

Serve with a loaf of warm, crusty bread to sop up the herb-flavored dressing.
