     Meatloaf w/Gravy and Root Vegetables

Ingredients
0.75lb ground beef
1/4c panko
2 garlic cloves, minced
1 shallot, finely minced
1 sprig of thyme, stripped and chopped
1Tb ketchup
Mini loaf pan
1 turnip
1 bunch of baby carrots
 
2Tb butter
2Tb flour
1 beef stock concentrate
EVOO
Salt
Ground black pepper

Instructions
Preheat oven to 400 degrees. In a small bowl, combine Panko with 2Tb of water. Set aside. In another bowl, combine ground beef, Panko, garlic, half the shallots and half the thyme, 1/2ts of kosher salt, and ground black pepper. Pack into mini loaf pan and top with 1Tb ketchup. Bake for about 20-30 min, until thoroughly cooked.
Halve the baby carrots. Peel the turnip and then cut into thick french fry like matchsticks. Toss both on baking sheet with 1Tb EVOO, salt and pepper. Bake in oven as well for about 10 min. Toss or turn halfway and bake for another 5-10 min.
Combine stock concentrate, 3/4c of water and thyme in a bowl. Set aside. Heat butter in medium pan over medium heat. Add remaining shallots and cook until soft. Sprinkle in flour and whisk constantly to combine. Slowly add in the stock/water mixture until the rue thickens. Taste and season with salt and pepper.
Slice meatloaf, and serve with vegetables. Spoon gravy over meatloaf and enjoy.
