     Chloe's Refried Beans

Ingredients
Dried pinto beans
2 medium onions per 1 gallon soup pot
1 c. cooked tomatoes
3 to 4 T cooked carrots (grated)
cumin
garlic (powder or fried)
chili power
 

Instructions
Soak beans overnight. Fill pan w/ about 1/3 beans and fill to the top with water
Cook until fairly soft on low heat (about 3 to 4 hrs?). Add ONLY BOILING water to top off as evaporation occurs. Skim off dark stuff from top.
Fry up onions on high heat in about 1T olive oil, then add about 1/2 c. water after they've browned, and cook on low heat.
Add onions, cooked tomato, carrots, cumin, garlic, and chili powder. Cook 1/2 to 1 hour on low heat, stirring frequently.
