     Almond Ravioli

400g flour (0 0)
200g butter
1 cup sugar (used 3/4 cup)
1 teaspoon vanilla essence
Zest of a lemon
3 eggs
1 tblspoon baking powder
Milk 1/4 cup if needed
500g pure almonds
3 egg whites (used 2 egg whites)
100g granulated sugar
300g icing sugar (used 150g icing sugar)
1/4 cup chocolate chips
1/2 teaspoon almond essence ( optional)

Almond Ravioli (Delicate cookies filled with almond paste)
Pastry- In a bowl mix all the pastry ingredients and add as much milk if necessary, to make a soft dough and elastic. Cover it and let it rest for 30 minutes.
Filling- Mix the ground almonds, the egg whites, all sugar and the almond essence together. In the end fold the chocolate chips.
Method- Take a small amount of dough, the size of a golf ball and roll it in your hands. With your finger, press in the middle of the ball and fill it with some almond filling. Close it to cover the filling and roll it again in your hands. Place it on a greased baking dish and with the palm of your hand press it down. Complete this procedure, till you make them all. I have made 24 biscuits and have left pastry and filling for a small tart, or else you can make them all biscuits. Bake oven on 190c for 20-25 minutes, depends on your oven. Enjoy --) They are delicious!
