     Creamy zucchini & spinach rigatoni

Ingredients
3 cups uncooked rigatoni
1 tsp olive oil
1-2 zucchini slices
1/2 lb mushrooms
2 cloves garlic minced
1 TBS flour
seasonings, like Mrs dash's or anything you like
1 cup broth veg or chicken
4 oz cream chees or feta I liked the feta
 
1 bunch fresh green, kale or spinach
1 cup mozzarella
1/2 cup parmasin chees

Instructions
Cook pasta In large skillet on med heat oil, add zucchini, mushrooms & garlic, Cook until crisp 5 min. Add flour and seasonings cook about 1-2 min. Stir in broth, cook until thickened, add your feta or cream cheese. Drain pasta mix with veges add your greens parmesan and about ½ cup mozzarella mix lightly spoon in to casserole (spray pan) Top with more mozzarella/parmesan. Bake 375 10 min or until cheese is melted. You can cut up fresh basil or chives for on top.
