     Chicken Cassoulet

Ingredients
4 slices bacon
1/4 cup flour
Salt and black pepper
1 3/4 pounds chicken pieces
2 cooked chicken sausages, cut into 1/4 inch pieces
1 onion, chopped
1 1/2 cups diced red and green bell peppers (2 small bell peppers)
2 cloves garlic, finely chopped
1 teaspoon dried thyme leaves
 
Salt and black pepper
Olive oil
2 cans (about 15 ounces each) Cannellini or Great Northern beans, rinsed and drained
1/2 cup dry white wine (optional)

Instructions
Preheat oven to 350 degrees. Cook bacon in large skillet over medium-high heat until crisp. Remove and drain on paper towels. Cut into 1 inch pieces. Pour off all but 2 Tablespoons fat from skillet. Place flour in shallow bowl; season with salt and black pepper. Drip chicken pieces in flour mixture; shake off excess. Brown chicken in batches over medium-high heat in skillet; remove and set aside. Lightly brown sausages in same skillet; remove and set aside. Add onion, bell peppers, garlic, thyme, salt and black pepper to skillet. Cook and stir over medium heat about 5 minutes or until softened, adding olive oil as needed to prevent sticking. Transfer onion mixture to 13 x 9 inch baking dish. Add beans; mix well. Top with chicken, sausages and bacon. If desired, add wine to skillet; cook and stir over medium heat, scraping up brown bits on bottom of pan. Pour over casserole. Cover; bake 40 minutes. Uncover and bake 15 minutes more or until chicken is no longer pink in
center and juices run clear.
