     Okra and Tomatoes

Ingredients
1 small onion, finely chopped
1 pepper, finely chopped
2 cloves minced garlic
1 Tbsp butter
1/2 cup grated carrot
1/3 cup ketchup
1 tsp dried basil
3 cups tomatoes (1.5 lb or 2 large)
1 10 oz can of Rotel tomatoes with chiles
 
3 cups (1.5 lb) fresh okra cut into 1/2 inch slices

Instructions
In a medium skillet, over medium heat, cook onion, pepper and garlic in butter, stirring occasionally until tender, about 3 minutes. Add carrot, ketchup, basil, fresh and canned tomatoes, cook 10 to 15 minutes.
Add okra and cook until vegetables are tender, 3 to 5 minutes, taking care not to overcook the okra. For a milder version, substitute two additional large fresh tomatoes (diced) for the Rotel.
