     Creamy Avocado-Jalapeno Soup

Ingredients
1 fresh jalapeno, seeded and chopped
1 clove garlic, chopped
2 tablespoons butter
12 ounces can fine diced tomatoes (drained)
2 ripde avocados, dived into large cubes
1 ounce fresh cilantro
2 shallots, finely diced
1 cup chicken stock
1 1/2 cup heavy cream
 
1 pinch white pepper
1/4 teaspoon kosher salt
1/2 lime, juice only

Instructions
In a saucepan, saute the shallots, jalapeno, and garlic in butter until soft. Add in the tomatoes and liquids. Season with salt and pepper and simmer for 10-15 minutes. Add in the lime juice, cilantro, and dices avocado. Check seasonings and serve.
