     Crab Meat Souffle

Ingredients
3 tablespoons butter
4 tablespoons four
salt and pepper (to taste)
1 cup milk
3 egg yolks
1 cup crab meat (cooked)
2 tablespooon green pepper or pimiento (chopped)
3 egg whites (beaten)
 

Instructions
Make a white sauce of butter, flour, salt and pepper and milk, and cool. Stir in egg yolks. Fold in remaining ingredients. Place in buttered baking dish (8 inch round or into 6 buttered individual shells). Bake at 350 for 40 minutes(about 30 minutes for individuals)or until a silver knife comes out clean. Serve with tossed salad and fruit slice fro garnish.
