     Peddler Crab Bisque

Ingredients
1 cup or more flaked crabmeat
4 tablespoons flour
1/2 cup butter/margarine
1 cup minced celery (including leaves)
1/2 med. onion, minced
2 chicken bouillon cubes dessolved in 1 cup water
2 cups milk or half-anf-half
1/3 cup dry sherry
salt and pepper to taste
 

Instructions
In saucepan, melt butter and saute celery and onion, 5 minutes. Add flour. Gradually stir in milk and chicken broth. Heat to boiling, add sherry, reduce heat immediately. Stir over low heat until soup bubbles and thickens. Stir in crabmeat. Simmer 1-2 minutes only. Season to taste.
