Peel eggplant & cut into circles.
Beat an egg. Dip eggplant in egg then coat w/breadcrumbs. Fry eggplant lightly in olive oil.

13 x 9 baking pan.
Cover bottom of pan w/tomato sauce. Add eggplant & cover each w/sauce, generously top w/chees.
|
|
|
Repeat until eggplant is used. End w/eggplant.
Add sauce & sprinkle w/romano or parm. cheese.
|
|
|
Cover w/foil & bake at 325 for about 30 minutes.
