Preheat oven to 350 degrees. Heat oil in a medium,
oven-safe saucepan over medium heat. Add onions,
garlic and thyme, if using; saute until onions are
translucent, about 2 minutes. Add rice and saute
with onions for another 2 minutes. Add water,
season to taste with salt and pepper and bring to
a boil. Cover and place saucepan in oven for 18
minutes.
