Preheat oven to 400 degrees. Bring a medium saucepan
of salted water to a boil. Add cauliflower and
blanch until tender, about 7 minutes. Drain well and
place in an 8x8 baking dish.
In a small saucepan, melt butter over medium heat.
Sprinkle over flour and cook 2 minutes. Slowly
whisk in cold milk. Add nutmeg, salt and pepper to
taste Bring to a boil and cook until sauce starts
to thicken, about 5 minutes. Pour sauce over
cauliflower and sprinkle with cheese. Bake 15
minutes until gratin is bubbly and cheese has
melted. Let cool 5 minutes and serve hot.
