2 Tbsp finely shredded fresh basil (or other herbs)

Instructions
Preheat oven to 200C. Cook onion in oil until soft
and golden. Add sugar and cook stirring until
onion caramelises. Add the mustard and stir to
combine. Remove from heat.
Meanwhile, cook kumara until tender. Drain well.
Grease a 22cm (base) fluted tart tin and cover
with pastry, trim excess.
Cover pastry base with caramelised onion and top
with kumara. Whisk together the milk, egg, chicken
salt and basil in a jug. Pour into pastry base.
Bake for 40 mins or until golden and set.
