Coat the bottom of a large skillet with the oil
or bacon grease. Add sliced potatoes until
skillet is full. Add water. Cover potatoes with
the onion, salt and pepper. Cover potatoes and
let cook over medium high heat until tender.
Remove lid and begin turning over potatoes,
mixing in the onion. Continue cooking until all
water evaporates and potatoes start sticking to
the bottom of the pan. Let potatoes brown on the
bottom before turning over with a spatula. Serve
immediately.
