Ingredients
1 cup yellow cornmeal
1 1/2 cups flour
3/4 cup sugar
4 teaspoons baking powder
1 teaspoon salt
1 cup milk
2 eggs
1/4 cup vegetable oil
 

Instructions
Mix all ingredients and pour batter in muffin wrappers or a loaf pan. Bake at 425 degrees for 20 - 25 minutes. Serve warm from the oven. Tip- Spray muffin wrappers with vegetable spray to prevent muffins from sticking to the papers.
