     Stuffed Pork Tenderloin

Ingredients
2 pounds whole pork tenderloin
1/2 cup chopped onion
2 cups coarsely crushed saltine cracker crumbs
1 cup dried fruit bits
1/2 cup apple juice
2 Tablespoons chopped parsley
1/2 teaspoon salt
1/4 teaspoon allspice
1/4 cup apple jelly, melted
 
Salt and pepper to taste

Instructions
Cut tenderloin almost through lengthwise. Place meat between 2 pieces of plastic wrap and pound with a meat mallet until it is about 1/2 inch thick. Sprinkle with salt and pepper. In a bowl, combne fruit bits, apple juice, parsley, salt and allspice. Add crushed cracker crumbs, toss until well combined. Spoon stuffing mixture on edge of meat and roll up; pinching ends to seal. Place meat seam side down, in a shallow pan. Roast in a 375 degree oven for 30 - 35 minutes or until meat is no longer pink. Spoon jelly over top of meat the last 10 minutes of cooking time.
