8 Eggs, beaten at high speed-quickly-about 10 seconds
1 Tsp Salt
Instructions
Dough- Mix (4) cups flour, 1 cup water (or less),
4 Tbsp oil, 1/2 tsp salt. Can use less flour.
Prepare dough 1 day in advance for best results.
Butter/Crisco Mixture-
1 lb butter, 6 heaping tbsp Crisco (can add 1
heaping tbsp Lard or crisco for each stick). Lard
makes more flakier! Melt in large bowl in
microwave at 1 minute intervals.
Fillings-
Cheese Mixture, Spinach Mixture, Leak Mixture.
Cheese- Mix cottage cheese, eggs, salt
Spinach- (2) 10 oz pkg frozen spinach - thaw &
squeeze out liquid. (Optional-sautee 1/2 chopped
onion in butter, add to squeezed spinach). Add to
above cheese mixture.
Leak- 1 cup chopped leek-saute in oil, cool and
add to above cheese mixture.
Note- If using feta cheese, do not add salt-use 1
cup crumbled cheese to above cheese mixture.
Baking- Preheat oven to 400 degrees, place in
oven for 20 minutes, check pans, turn down oven
to 350 degreese for 30 minutes, after 30 minutes,
turn pans. Continue baking 30 minutes checking
closely. When and if they rise, poke with knife
to let out steam.
