     Marinara Sauce

Ingredients
3 - 28-ounce cans, whole peeled tomatoes, drained
6 tablespoons olive oil
3 cups finely diced yellow onion
1 cup finely diced carrots
1 cup finely diced celery
6 cloves garlic minced
12 ounces tomato paste
3/4 cup dry red wine
6 tablespoons Italian seasoning
 
salt & pepper to taste

Instructions
Heat your Simmer Down pan on medium heat, until the rim of the pan is hot-to-the-touch. Add the olive oil and heat for 1 minute. Add onions & celery and saute until onion is translucent. Add tomatoes, garlic, tomato paste, wine & Italian seasoning. Cover & simmer for 30-40 minutes. Season to taste with salt & pepper. Serve over your favorite cooked pasta.
