     Blinna (Thin German Pancake)

Category   Breakfast - Brunch
Sub Category   None

Ingredients
2 1/2 tsp yeast
2 cups flour
1/2 tsp salt
1/2 cup warm water
2 Tbsp sugar
2 cups Luke warm water
1 egg
1 tsp baking soda

1 cup hot water
1/2 cup oil

Instructions
Dissolve the yeast in the ½ cup water. In a large bowl, mix flour, sugar, salt, 2 cups water and dissolved yeast. Cover mixture and let set overnight.
IN THE MORNING- Beat the egg in 1-cup hot water and add the baking soda and oil. Mix well with yeast mixture. Batter will be very thin and watery. Bake on a lightly greased frying pan over medium low heat. Pour about ½ cup of batter into pan, holding at an angle. Move pan in a circular motion until it covers the entire pan. Set back onto burner. When edges start to curl and there are tiny holes, flip to other side. Should be golden brown. Blinna’s will be very porous and thin. You can also roll sausages up in them!
