350g (used 250g) caster sugar or normal sugar, still taste so good
100g Icam milk chocolate, melted.
4 eggs separated
Pinch of salt
1 teaspoon ground cinnamon
1 teaspoon ground mixed Spice
1/3 teaspoon ground cloves
300g self-raising flour
240ml milk
50g cut mixed peel, used orange and mandarin candied peel
Instructions
Cream butter and sugar till light and fluffy.
Blend in melted chocolate and egg yolks. Sieve
salt, spices and flour and stir alternately
with the milk. Fold in stiffy beaten egg whites
and peel. Place in a grease baking loaf tin.
Bake in a moderate oven 180c for about 45
minutes. When cool decorate with chopped
chocolate on top or Chocolate Butter Icing or
anything you like. Enjoy, it's very moist, very
light and the taste of the spices really
delicious -)
