     Squid (Calamari) Stew

Ingredients
700g-1000g frozen or fresh Squid Tubes (used Lilly frozen packet)
1/2 teaspoon Garamasala
1/2 teaspoon cinnamon
1/2 teaspoon corriander
1/2 teaspoon cardamon
1 fish cube
1 can of 400g polpa
2 tablespoons tomato paste
1 teaspoon sugar
 
1 big onion (peeled and sliced)
Some black whole olives
1/2 cup white wine
1 tblspoon olive oil
About 6-8 medium potatoes peeled (cut in halves or quarters)
2 big bay leaves
Salt and pepper
Handful frozen peas
3 medium carrots (peeled and diced)

Instructions
Take a big pan, add 1 tablespoon olive oil, fish cube, onion, carrots, bay leaves, some water. Rinse Squid and cut into pieces, add to the pan. Let all simmer till onion is a bit transparent. Add all spices, can of polpa, salt and pepper, sugar, tomatoes paste, frozen peas, black olives and the wine. On medium heat let them simmer for about 30 minutes. Add potatoes. Cook till the potatoes are soft and the Squid pieces (Calamari) are tender. Enjoy!
