1 (8oz) package of fideo pasta (or spaghetti, broken into short lengths)
1/4 of an onion, diced
2 garlic cloves, minced
1 (8oz) can of tomato sauce
1/2 ts ground cumin
1.5c of water (add chicken bouillon) or chicken broth
Pinch of salt
Ground black pepper (to taste)
Cilantro, chopped
Instructions
Note- If using spaghetti, cook pasta a little
longer and add more liquid.
Heat oil in saucepan over medium-high heat.
Add onions until soft. Then add pasta and fry
until brown. Add garlic until fragrant. Pour
in half of the tomato sauce and 1c of
water/bouillon/broth. Season with cumin, salt,
and pepper. Stir to blend.
Bring to boil and cook until liquid has almost
evaporated.
Stir in remaining tomato sauce and water/broth.
Cover and cook over medium heat for about 10
minutes until tender. Add cilantro and stir in.
