Fry onions adding a little balsamic dressing or balsamic vinegar cooking till moisture is gone. Add red peppers to the pan to warm through.
Butter thick slices of a sturdy bread. Arrange layers of the rest of the ingredients on the non buttered side. Top with second slice of bread with butter side facing out. Grill in a frying pan or pannini press till golden.
