Heat oven to 400. Peel away loose layers around head of garlic.
Cut off 1/4 inch from top of head to expose cloves.
Drizzle 1 teaspoon of olive oil over garlic head. Wrap garlic in
aluminum foil and roast for 30-40 minutes. Let garlic cool.
Change oven to 425.
Press bottom of clove to push out and mash with fork. Combine
garlic with ricotta and set aside.
Roll out pizza dough. Put on greased pizza pan.
Spread ricotta on then mozzarella then veggies. Bake 18-20
minutes
