     Creamy Tomato Balsamic Soup

Ingredients
Two 28-oz. cans whole tomatoes, drained
1 cup sliced onion
4 garlic cloves
1 cup beef broth
1 T. brown sugar
1 T. balsamic vinegar
1 T. low-sodium soy sauce
2 t. basil
Salt and pepper to taste
 

Instructions
Place tomatoes, onion, and garlic cloves in a 9X13 pan. Pour broth mixture over tomatoes in pan and bake at 500 degrees (make sure oven is preheated) for 50 minutes or until vegetables are browned. Let cool. Place tomato mixture (half at a time) in a blender. Add a little more broth and 1/4 cup half & half (or milk), and process until smooth. You can strain this if you want. Reheat to serve. Garnish with a few crumbles of goat cheese. Believe me, you will want to double this recipe, it's so good!
