     Black Bean Soup

Ingredients
16 ounces dry black beans
6 cups chicken broth
2 tablespoons olive oil
1 cup chopped onions
1 cup shredded carrots
One Bay leaf
1 teaspoon oregano
1 teaspoon salt
1 cup celery chopped
 
1 cup shredded potato
1/2 teaspoon garlic powder
1/4 teaspoon pepper
3 tablespoons lemon juice
A dash of hot sauce

Instructions
Soak beans as directed on the package drain. In a large deep pot bring beans and chicken broth to boil. Reduce heat and simmer covered one and a half to two hours. Put oil In a large skillet & sauté onions carrots and celery for 3 to 5 minutes until crisp-tender. Add sautéed vegetables and the remaining ingredients except the lemon juice to the beings and stir well. Simmer covered and additional hour just before serving stir in the lemon juice.
Serving Suggestions
Garnish with lemon slices chopped onion jalapeño pepper or cheese
