     Shrimp scampi with Linguine

Ingredients
2 lbs. shrimp
1/4 cup olive oil
2 TBSP
1 cup white wine or chicken broth
1/4 cup chopped parsley
2 cloves garlic
1/2 onion, chopped
fresh ground pepper
2 TBSP lemon juice
 
optional- 1 can minced clams, undrained (6.5 oz.)
1 tsp. oregano
1 tsp. oregano
2 TBSP. cornstarch and 2 TBSP. cold water

Instructions
Start linguine to boil and cook per instructions- Defrost shrimp; meanwhile heat olive oil and saute onion and garlic for 2-3 minutes in large skillet
Pour wine or stock into pan and reduce. Add 1/2 can of diced tomatoes, and a dash of lemon juice. Stir in Spices and clams. Reduce 5 minutes. (boil down?)
Add shrimp and cook 2-4 minutes or until opaque through center. Stir in butter and add parsley. Add salt and pepper to taste. In small bowl, combine cornstarch adn water, blend will. Slowly stir into seafood micture. cook until mixture boils and thickens, stirring constantly.
Drain linguine pasta and put in bowl or 9 X 9 and toss the shrimp/sauce with the pasta. Serve with bread/salad. Just enjoy!
