     Cold Wild Rice

Ingredients
1 pkg Near East Long Grain and Wild Rice
1/4 cup raisins
1/4 cup green onions, sliced thing
1 red pepper, diced
1 carrot shredded
1/2 clove minced garlic
1/4 cup red wine vinegar
1/3 cup vegetable oil
1 tsp dijon mustard
 
Toasted pecans, chopped
Optional- 2 cups diced chicken

Instructions
Cook the rice per the instructions then set asde to cool. Mix together the raisins, onions, carrot and red pepper and set aside.
Mix together the garlic, vinear, oil an mustard, then mix the sauce with the rice.
Add other ingredients, including the meat if you choose, and chill. Add toasted pecans to the top when serving.
