Heat oil in medium pan and fry the ginger, garlic
and chili (chop garlic, ginger & chili in small
food processor for ease of chopping)
Add zest and juice of two oranges, soy sauce and
maple syrup. Reduce
At the same time, pan fry salmon in another pan.
2 min per side (total of 8 min)
Then transfer the salmon to the pan with the sauce
and cook another min on each side (3-4 min total)
