     chicken creolo over rice

Ingredients
2 tsp olive oil
3/4 lbs boneless skinless chicken, cubed
1/2 large onion chopped
1/2 green bell pepper sliced thin
1 stalk of celery chopped
4 cloves of garlic, crushed
2 C canned, chopped tomatoes
2 tsp dried oregano
1 T. Worcestershire sauce
 
1/8 tsp cayenne pepper
salt and pepper to taste

Instructions
Heat oil in skillet add chicken and brown, remove to plate, lower heat, add onion, pepper, celery, and garlic. Sauce 3 minutes add tomatoes, oregano, worcestershire and cayenne pepper. Return chicken to pan and simmer 3 minutes. Add salt and pepper to taste. Serve over rice. Makes two large servings or 4 small ones.
