Saute in large pt carrots and large onion in butter until onion
is transparent. Add potatoes and 1/4 of the potato water.
Bring to a simmer.
Add velvet and melt into mixture, add sour cream, milk, green
onions and stir continuously. Mash mixture until thick and
slightly chunky. Add more milk if too thick. Top with
Crumbled bacon and shredded cheese and chopped
tomatoes.
