     Pork Roast

Ingredients
4 large garlic cloves [pressed] or 1/2 tsp garlic powder
4 tsp rosemary [2 tsp dried]
1 1/2 tsp coarse salt
OMIT 1/2 tsp black ground pepper
2 1/2 lb boneless pork roast, well trimmed
fresh rosemary sprigs [optional]
 

Instructions
Line a 13 x 9 pan with aluminum foil. Mix seasongs and rub all over the pork. Place pork fat side down in the pan. Cook for 30 minutes. Turn the pork fat side up, cook until thermometer reaches 155 degrees, about 25 minutes. Remove from oven, let stand 10 minutes. Pour the juices into a small saucepan over low heat. Cut the pork 1/3 inch slices. Arrange pork slices on a platter. Pour juices over the pork. Garnish with fresh rosemary sprigs, if desired.
