     Tuna Mornay

Ingredients
200g macaroni
50g butter
Kernels from 1 cob
1 medium carrot, diced finely
1 brown onion, diced
1/4 cup plain flour
2 cups milk
2 Tbs Dijon mustard
1 cup tasty cheese
 
425g can of tuna
1/4 tsp salt
1/4 tsp ground pepper
Parmesan to serve
Breadcrumbs to sprinkle on top

Instructions
Cook the macaroni to packet directions.
In large pot over medium heat, melt butter and add corn, carrot and onion. Sauté until carrot is soft. Sprinkle flour over to coat all vegetables.
Pour in 1/2 cup of milk and stir until it is all mixed in and forming a thick paste. Add another half cup and repeat. Continue stirring. Toss in mustard and cheese. Add tuna and break up chunks. Add salt and pepper.
Stir in pasta and place in baking dish. Too with breadcrumbs and cheese. Bake for 25 mins or until golden. Serve sprinkled with parmesan.
