2 leeks. White and light green part

Garlic scales or cloves 1-2

1 large zucchini

1/2 tsp red pepper flakes

1 tsp dried oregano
|

1/4 tsp salt

1/2 tbsp lemon zest - juice of 1 lemon

1/2 cup white wine of choice
|
|
|
|
1/2 cup plain unsweetened almond milk or regular milk
|
|
2 cups vegetable broth
|
|
Fresh basil
|
|
Whole wheat pasta
|

Instructions |
|
|
Sauté leeks and garlic in olive oil. Add zucchini and sauté 1-2
minutes. Add red pepper, oregano, lemon zest and juice.
|

Deglaze pan with white wine.
Finally add vegetable broth and milk.
|
|
|
Cook pasta until al dente. Toss with sauce. Or put in bowls and
top with sauce. Garnish with fresh basil.
|
|
|
We also added 1 cup frozen spinach. White wine choice -
Chardonnay.
