     Fish Tacos

Ingredients
5-6 frozen Tialpia fillets
1 (10oz) can Rotel, diced tomatoes, drained
2-3 garlic cloves, minced
1 Tbsp dried cilantro (or 1/4 cup fresh chopped)
2 Tbsp fresh lime juice
Ms. Dash Salt
Whole Wheat Tortillas or Hungry Girl Wraps
Toppings- Salsa, lettuce, peppers, reduced fat cheese, beans
 

Instructions
Spray the bottom and sides of the crock-pot with nonstick spray. Place the frozen tilapia fillets in the bottom of the crock pot. Mix the Rotel, garlic, lime juice, salf and cilantro in a small bowl. Pour the mixture over the tilapia.
Cover and cook on low for 4-5 hours. At the end of the cooking time, mix everything together and flake the fish apart. Spoon the mixture into your tortillas, add other ingredients according to taste such as chopped onions, peppers, cheese, lettuce etc.
This is a great low calorie and high protein meal. You'll need to calculate with the ingredients you decide upon but the fish, beans and cheese will add protein. Do not go over 40 grams of protein per meal. You could skip the tortillas and make a nice size fish taco salad!
