     Cabbage Soup in Tomatillo Broth

Ingredients
1 large can cooked tomatillos
1 lb ground chicken or turkey
Salt & Pepper, to taste
1 tsp cumin
1 tsp garlic powder
1 tsp oregano
1 tsp smoked paprika
Olive oil
1 small white onion, diced
 
3 garlic cloves, minced
1 jalapeño pepper, minced
1 red bell pepper, diced
2 Roma tomatoes, diced
2 Small cans diced green chiles
8 cups low sodium chicken broth
4 cups green cabbage, diced (approx 1 large head)
1 medium zucchini, diced
1/2 cup long grain rice

Instructions
Drain the canned tomatillos and transfer to blender. Blend on high till smooth. Set aside.
Preheat a large Dutch oven to med/high heat. Add ground meat. Season with salt, pepper, cumin, garlic powder, oregano and smoked paprika. Cook stirring often till lest is seared and browned. Reduce heat to medium.
Add onion, garlic, jalapeño and bell pepper. Cook a few minutes. Add tomatillos and all remaining ingredients except the zucchini and rice. Bring to boil and reseason with dry spices used to season meat. Season to taste b
After about 20 minutes, add zucchini and rice. Continue cooking for approx 15 minutes or until rice is cooked.
Serving Suggestions
Garnish soup with cilantro and lime.
