     Pierogi Pasta Shells

Ingredients
25 uncooked jumbo pasta shells
1 pkg. (32 oz. each) refrigerated mashed potatoes
1 TBSP. dried minced onion
1/4 tsp. onion powder
1/4 tsp. garlic powder
2 1/2 cups shredded cheddar cheese, divided
1/4 cup chopped green onions
 

Instructions
Cook pasta shells according to package directions. Drain and rinse in cold water. Place mashed potatoes in large microwave-safe bowl. Microwave high for 4 minutes, stirring once.
Add the minced onion to potatoes, and onion powder and garlic powder. Stir in cups of the cheese until blended.
Stuff into shells. Place in greased 13 X 9 baking dish. Sprinkle with the green onions and the remaining cheese.
Cover and bake at 350 for 20 minutes. Uncover and bake 10 minutes longer or until heated through.
