Combine sugar, vanilla essence, half the cream and half the milk in a medium pan, stir over heat, without boiling, until sugar dissolved. Remove from heat, stir in the remaining Cream and milk. Pour in a plastic container and freeze until just set. Take out from freezer and chop Ice-Cream roughly, beat in a large bowl with electric mixer, or process until smooth. Pour into a plastic container and freeze again, until firm. Enjoy! It's delicious -)
