     Roasted Pine Nut Hummus

Ingredients
2 C chickpeas, drained & rinsed
3 Tbs. tahini (maybe less)
1/4 C fresh lemon juice
1 1/2 Tbs. olive oil
3/4 C pine nuts, lightly toasted & finely chopped
1/4 Tsp. cumin
1 clove garlic, crushed
1 Tsp. salt
3 Tbs. plain yogurt
 
1 Tsp. parsley or cilantro, finely chopped
2 Tbs. water

Instructions
In a blender/food processor, blend the chickpeas. Add tahini, lemon juice, garlic, salt & water until a paste is formed. Pour mixture into large bowl and add remaining ingredients, mixing well. Garnish with parsley or cilantro. Refrigerate for about an hour.
