     Queso Flameado

Ingredients
2 oz loose Mexican-style chorizo
1 small onion, sliced into rings
1/2 of a tomato, diced
4 C monterey jack, shredded
1 Tbs everclear or 151-proof rum
flour tortillas
 

Instructions
Preheat over to 400 degrees. Fry chorizo in medium-hot skillet for 6-8 minutes. Add onion & tomato and cook another 8-10 minutes. In a separate, small cast iron skillet, bake cheese in oven until melted, about 12-15 minutes. Spoon chorizo mixture over cheese. Pour liquor over dish and light on fire to burn off alcohol. Serve with warm flour tortillas (or strong chips).
