     Fig Jam (best-2015)

Ingredients
5 lbs fresh figs (before boiling/chopping)
6 C sugar
1/4 C fresh lemon juice
12 or so half-pint jars & lids
 

Instructions
Pour boiling water over figs in a large bowl. Let stand 10 minutes, drain. Trim and chop (quarter - another chop-leave pretty chunky). Bring figs and sugar to a boil (does NOT require extra water), cook until sugar disolves & mixture thickens. Add lemon juice and cook 1 more minute.
Make sure canner has enough water in it to cover the jars by an inch. Sterilize the jars. Fill jars, leaving at least 1/4 inch space. Place jars in canner and boil for about 5 minutes. Remove jars and let them cool completely-do NOT press the middle of the lid. They will start popping as they cool and seal.
