     Soup, Chicken Sausage Soup Italian Style

Ingredients
Sprouts Chicken Sausage, one piece hot, three pieces sweet
1 large sweet yellow onion, diced
5 cloves garlic minced
1 large can petite diced tomatoes
1 large can crushed tomatoes
1 each yellow and red bell pepper, diced
3/4 lb baby bella mushrooms, sliced
1/4 c fresh parsley
1/4 c fresh basil
 
8 tsp mexican oregano - available in bulk spices at Sprouts
2 tsp coarse salt
3/4 can water
Prepared bite sized pasta, one ounce uncooked for each serving
4 stalks celery, sliced
Olive Oil

Instructions
Heat 3 Tbs oil pan in large stock pot, sautee onion and sausage until sausage is browned. Add all other ingredients EXCEPT pasta. Cook until vegetables are tender 30 minutes minimum. Add pasta just prior to serving.
Freezes nicely. Add freshly cooked pasta to thawed soup for best tasting leftovers.
