     Chocolate Zucchini Cake

Ingredients
4 (1 oz) squares unsweetened chocolate, melted
3 cups flour
1 1/2 tsp baking powder
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
2 tsp vanilla
4 eggs
3 cups sugar
 
1 1/2 cups vegetable oil
3 cups grated unpeeled zucchini
1 cup chopped nuts (optional)

Instructions
Preheat oven to 350 degrees. Beat eggs; add sugar, oil and vanilla; beat until smooth. Stir in chocolate. Add dry ingredients and blend well. Stir in zucchini and nuts.
Pour into a greased and floured bundt pan. Bake at 350 for one hour or until cake tests done. Cool for 10 minutes on a rack and remove from pan.
