     Jalapeno Popper

Ingredients
6 Large Jalapenos
6 Slices Monterey Jack or Mozzarella Cheese (1/2- in thick)
All-Purpose flour for dredging
1/4 cup vegetable oil
2 Eggs separated
 

Instructions
Place peppers in a bowl & add scalding water to cover. Let stand 30 min.in 1 Hour until softened. Heat the oil. Beat the Egg Yolks until thick & Lemon colored. Beat the whites until they stand in peaks. Fold the Yolks into the whites & dip each pepper in the Egg Mixture until well coated.
Heat the oil in a frying pan & fry the peppers until browned on all sides. There are lots of Variations. You can mix a mild Shredded Cheese with Cream Cheese & Chopped fresh Cilantro for stuffing.
Some Recipes call for coating the peppers In crushed corn flakes & baking them in the oven. Another Option is to wrap the Jalapeno halves with bacon slices, secure them with toothpicks & boil, Turning them frequently enough so the bacon cooks around them.
