2 Tablespoons olive oil
|
|
3 shallots, chopped
|
|
2 cloves garlic, minced
|
|
1 pound peas
|
|
4 ounces prosciutto, diced
|
|
1/4 cup Italian parsley, chopped
|
|
salt & freshly ground black pepper
|
|

|
|
|
|
|
|
|
|
|
|
|
|
|

Instructions |
|
|
Heat oil over medium-low heat. Add shallots, garlic, salt & pepper and saute until tender, about 1 minute.
|

|
Add the peas and saute until thoroughly heated, about 5 minutes.
|
|
|
Stir in the prosciutto and cook 1 to 2 minutes. Add the parsley and remove from heat.
|
|
|
Season to taste with salt & pepper and serve.
|
